Ingredients
  • 2 lbs Salmon
  • 1 Cedar plank (pre-soaked in water)
  • 1/2 cup Brown Sugar
  • 2 tbsps Olive Oil
  • 1 tbsp Dried Italian Seasoning
  • 1 tsp Smoked Paprika (if you're local to Santa Barbara, we recommend Vices & Spices)
  • 1/2 tsp Kosher salt
Directions

Preheat a gas grill to medium.

HOW TO PREPARE A CEDAR PLANK FOR GRILLING

Once you have purchased your grilling plank and are ready to use it, rinse it off under warm water to remove dust and residue.
Next, fill your kitchen sink half full of water. Submerge the cedar plank all the way into the water. Use a heavy item (such as a full wine bottle) to hold it in place at the bottom of the sink.
Soak the plank in the water for at least 1 hour.
After the cedar plank has soaked for the appropriate amount of time, and once you are ready to grill your salmon, place the plank on a pre-heated grill for 5 minutes, or until it begins to smoke and crackle.

In the meantime, combine brown sugar, olive oil, Italian seasoning, smoked paprika and Kosher salt in a small bowl.

Using clean hands or a spatula rub the mixture over the top of the salmon filet (the side the skin was not on)

Place the prepared salmon onto the cedar plank, what would have been skin side down.

Grill for 30 minutes, or until salmon turns light pink in color and is flaky.
