Single vineyard from La Encantada. North facing slopes on uplifted oceanic sedimentary deposits create for full-bodied, concentrated wines. After a 1-hour skin soak, this wine was pressed and cold settled. Stainless tank fermentation in our 45-degree cold room creates a heavier, fruit forward wine.
14 Day fermentation, racked and put through malolactic fermentation. Barrel aged for 10 months.
