This full bodied Syrah was fermented in small open top fermenters in a cold winery resulting in long cool fermentation and low extraction. We looked for elegance and an emphasis on fruit. The wines are pressed directly to 225 Liter French oak barrels. Malolactic occurs in barrel and the wine is never racked until bottled.
Vineyard Region: Santa Barbara County
Vintage Conditions: It was a consistently warm (not hot) dry summer and we had veraison quite early. We seek ripeness without excessive sugar to make balanced, ageable wine. We want fruit just approaching ripeness with higher acid and a lower brix.
Winemaking: Fermented in small open top fermenters and punched down three times a day for 7 to 14 days
Maturation: The wine was pressed after fermentation and matured for 10 months in seasoned French oak barrels and racked 2 times before being blended for bottling.
Palate: Dark full bodied wine with full blueberry-cherry fruit complemented by earthy wood, espresso and dark roast coffee bean. The finish is complete with full tannins, black licorice, cocoa and dark chocolate.
